Mediterranean Beef with CousCous

Mediterranean Beef with CousCous

This dish brings the flavours of the Mediterranean to your home. Its a great recipe suitable for the entire family to enjoy. 

Serves: 6

Cooking and Prep Time: 40 minutes

 

Ingredients:

1 orange juiced 

3 teaspoons Moroccan seasoning

2 tespoons rosemary 

6x 125g lean beef steak, fat trimmed

1 cup boiling water

2 spring onions, finely diced

10 dried apricots, chopped

1/4 cup dried currants 

1/4 cup dried cranberries 

1 cup couscous

1 teaspoon ground cumin or ground coriander

420g can no-added-salt chickpeas, drained

½ cup chopped coriander

2 cups (250g) green beans, trimmed

1 small head broccoli or broccolini, cut into florets

 

Method:

  1. Mix orange juice, sesonining and rosemary in bowl for marindae. 

  2. Add steaks to orange juice, turning to coat in juice mixture.  Cover and set aside for 20 minutes to marinate. 

  3. In a large heatproof bowl combine spring onion, apricots, currants, cranberries, couscous, cumin or dried coriander. . 

  4. In a small heat proof bowl add boiling water and combine couscous mix, cover and set aside. 

  5. Microwave beans and broccoli in a covered dish with 1-2 tablespoons of water on HIGH for 4 minutes until just tender. 

  6. Meanwhile heat a large non-stick fry pan.  Drain steaks well and discard marinade.  Cook for 3 minutes on each side or until cooked to your liking.  Remove from heat, cover and set aside to rest for 3 minutes. 

  7. Fluff couscous with a fork to separate grains and stir through chickpeas and coriander. 

  8.  Serve Warm
