Recipe: Healthy Banana Muffins

 

Makes 12

Cook time: 25 minutes

Perfect for lunch boxes, cook up a batch and freeze for the week ahead. 

Ingredients

3 ripe bananas, mashed

¾ cup rolled oats

2 eggs

½ cup milk

1 small handful of chopped walnuts (optional)

¼ cup honey OR pure maple syrup

1 cup wholemeal plain flour

1 cup plain flour

1 tsp baking soda

½  tsp ground cinnamon

1 tsp vanilla extract

Method:

  1. Preheat oven to 180C (350F). Grease a 12 cup muffin tray with oil.

  2. Whisk together the egg, honey OR maple syrup and vanilla extract, until well combined.

  3. The mixture should appear fluffy. Mix in the mashed bananas, walnuts and milk.

  4. In a separate bowl, combine the rolled oats, flour, baking soda and cinnamon.

  5. Add the banana mix to the dry ingredients and mix with a wooden spoon, until just combined.

  6. Divide the batter evenly between the 12 cases.

  7. Bake the muffins for 20-25 minutes, or until a skewer inserted into the middle of the muffin comes out clean.

  8. Leave the muffins to cool for 5 minutes in the muffin pan.
