Lemon Chicken & Mushroom Stroganoff with Cauliflower Rice

Cooking and Prep Time: 25 minutes
Ingredients:
1 tablespoon olive oil
2 chicken breasts, sliced
200 g mushrooms, sliced
40g pakcet Continental Reduced Salt French Onion Simmer Soup
2 teaspoons dijon mudtard
2 teaspoons lemon juice
200 ml light sour cream
2 sring onion, diced
1/2 head cauliflower, grated
Vegetables (i.e. green beans, zucchini, broccoli, Brussels Sprouts)
Method:

Heat olive oil in deep frying pan over medium heat.
- Add diced chicken to pan and cook for 2-3 mintues until brown.
- Add msuhromms to the pan and cook for 2 mintues.
- Add soupt mix, mustard, lemon juice and 2 cups boiling water. bring to a simer and cook for 5-6 minutes.
- Stir through sour cream, cover and remove from heat.
- Add caulfower to a microwave safe dish and cook on high for 4 mintutes until jsut tender.
- Divide between plates an serve with steamed vegetables.
